Very easy ice cream recipe!!! I have tried it with real coconut meat too, it is not as thick but it does the trick for a perfect cold snack for the warm weather days.  The ginger is a nice addition too, but if you don’t fancy the taste, omit it. Dates are good options as sweeteners that are my go to when making desserts.

Coconut-mango ice cream

5 minutes and some waiting

·       15-ounce can coconut cream (chilled)

·       10-ounces frozen mango

·       1/2 teaspoon cardamon powder (or 1 pod)

·       5-6 soaked dates

·       1/2-inch piece ginger, peeled

     1.  Put the cream (minus the liquid), frozen mango and ginger in a high speed blender or Vitamix.

     2.  Once it’s all smooth, add the dates and cardamon and blend again until its all incorporated.
