We are getting closer to the end of summer and the little tomato plant at my mom’s backyard keeps giving more tomatoes!!πŸ…πŸ…πŸ…πŸ…πŸ…Β A bit sad that they are almost gone, but happy that this year we got quite some to enjoy with salads or as a snack. Very thankful for them as it was also therapeutic for my mom while spending time out in her garden.

Don’t have salad greens 🌿🌿🌿 ? No problem… I used parsley instead and it was delicious. Actually, I prefer it better with parsley than with the usual mixed salad greens. I love how fresh it tastes. Usually we have herbs as decorations on the plate but you’d be surprised to know and taste how delicious these can be as a main ingredient of a dish (coming up next, recipes with herbs as the main player).

Parsley is packed with vitamins A, C (three times more than oranges), antioxidants, and has twice the amount of iron and magnesium than steak! It helps detoxify the blood, aids digestion, helps control blood pressure and it is also anti-inflammatory.

Salmon is a great source the good type of fat, omega-3 fatty acids (anti-inflammatory, increase immune function, decrease blood clots). Just keep in mind to avoid getting ‘farmed’ fish, since these can contain incredible amounts of antibiotics, have low nutritional value, have high levels of toxins, among other things. Β Some people nowadays choose to have sustainable, but make sure you know where the fish came from as that term doesn’t necessarily mean that it was grown in the wild or with none of the bad stuff mentioned above.

Ingredients:

2 servings

  • 1 wild salmon fillet (try to avoid farmed)
  • 1 bunch of parsley
  • 2 handful baby tomatoes (cherry)
  • 2 hard boiled eggs
  • Kalamata olives
  • 3 small boiled medley potatoes (purple, red and white)
  • 1 cup blanched green beans
  • for the dressing, I mixed olive oil with balsamic vinegar, lemon and salt and pepper to taste. Bam!!!, that simple.

 

Cook the salmon on the grill or stove with salt and pepper to taste.

Boil the potatoes, eggs and blanch the green beans, cut to small bites.
Chewing slowly, savoring and appreciating this food; good for digestion, good for your soul πŸ’«πŸŒ±πŸ…πŸ…πŸ…πŸ…
